I decided to get another envelope top, since this one is in white, and it will go with just about everything. It’s New Years Eve, and I have no plans to go out, just to stay in with my husband and watch Kouhaku on the Japanese channel. I can’t wait for next year. I’m already feeling so much better. Since my celiac disease diagnosis, I have stuck to the gluten free diet, and it has helped so much. Right now I’m in the stage where I’m healing so much, that I’m hungry all the time, and I have to be careful so I don’t outgrow my clothes! In 2011, I went from 132lbs to 108lbs, and then this year I’ve gone from 108lbs to 122lbs. I’m definitely on the rebound.
I’ve tried to eat a paleo diet, but it’s just impossible because I don’t want to feel too limited in my options just yet. Switching from eating anything I like to a strict gluten free diet is stressful and emotional, the hardest part is ordering from restaurants and not trusting anything. I do eat mostly paleo though, my breakfasts are strictly eggs, organic almond butter, bananas, apples, etc. My lunches and dinners are usually roast chicken, trout or salmon, steamed vegetables, quinoa or brown and wild rice or rice noodles, and sometimes cheese (which is why I said mostly). I make fresh carrot juice with organic carrots, I almost never eat prepackaged or processed food anymore, but I really enjoy Kind bars and Larabars, and the occasional udi’s muffins and rudi’s tortillas. I take Celiact vitamins twice a day, and they help so much since they contain extra digestive enzymes, I don’t know what I would do without them. I am so happy that this is almost over, and I can hopefully spend next year finally getting back on track!
